A response from chef Joseph Schilling, recently promoted from the Art Institute of Philadelphia to dean of education at the school’s New York City campus, whom I cited in last week’s column as having been accused by industry peers of sporting “Certified Executive Chef” lettering on his chef’s coat, despite not being listed as such by the American Culinary Federation: “I have recently completed my certification test for certified executive chef and certified culinary educator at the recent ACF Northeast Conference in West Virginia and passed the tests! I need to complete the paperwork and am able to be certified (no, not certifiable as some may think … ha ha)!” Thanks for sharing, chef, and best of luck with the new position.
Congratulations to Guillermo Pernot of ¡Pasión! and Trust, who won two James Beard Awards this past Monday. Details next week.... The Pennsylvania Liquor Control Board is hosting the opening of its newest super-store, The Wine and Spirits Shoppe at 1218 Chestnut, at 11 a.m. on May 9. Coinciding with the Philadelphia Wine Festival -- the Grand Tasting takes place that night at the Hyatt Regency Philadelphia at Penn’s Landing -- many of the celebrity winemakers who hosted wine dinners will be on hand, as will be racecar legend Mario Andretti.... Mum's the word for now, but I hear a third Figs (chef/owner Mustapha Rouissiya already owns BYOBs in Fairmount and Cherry Hill) is in the works for the fall. Details to come in a future column.... Speaking of Figs of Cherry Hill, its Village Walk Shopping Center neighbor, Miel Patisserie, owned by longtime Le Bec-Fin pastry chef Robert Bennett, has finally opened. There's a tribute for Bennett this Monday at Twenty Manning, including an array of samples from his repertoire. Call 215-731-0900 for details.... Mohan Parmar, chef/owner of Shivnanda Fine Indian Cuisine (114 Chestnut St.) has opened Lovash Indian Cuisine (236 South St.) in the property most recently occupied by Mirchi. Parmar, a master chef from India and a culinary instructor at The Learning Studio in Malvern, had originally planned to do an international concept. But after response from the neighborhood and former Mirchi customers, he opted for another Indian restaurant.... Avenue B unveiled its piano bar this past week. The star is a black, century-old Steinway. The piano-bar lounge features live entertainment and complimentary hors d'oeuvres, Wednesday through Saturday nights.... Reminder: This Sunday is Mother's Day. (Happy Mother's Day, Mom!) Among the myriad restaurant options is a jazz brunch at the Museum Restaurant in the Philadelphia Museum of Art. Brunch includes the musical stylings of Tony Miceli, along with, among other culinary goodies, an omelet station and a make-your-own coffee-cake buffet. (spirit0076@aol.com)
