1 Gazpacho

Made with a base of red tomatoes and heightened in flavor with sherry vinegar, raw garlic and extra-virgin olive oil, this chunky seasonal sopa is garnished with scoops of watermelon, goat cheese ice cream and microgreens. The concoction is accompanied by a rosemary baguette.

2 Vichyssoise

The SoupMan chain offers many options for cold-seekers, including gazpacho and cucumber bowls, but you should opt for the classic French Vichyssoise.The smooth stew features potatoes, leeks and onions combined with cream and chicken stock.

3 Veggie

Order beyond the raw bar at Pearl. The slick restaurant and lounge spoons up a chilled carrot yuzu, a citrusy fruit and veggie purée with avocado, mango and mint. You're not too suave to slurp.

4 Fruit

The fresh fruit soup at Warsaw Café is served cold, but their borscht, sadly, is not. Regardless, spoon up the mainstay's blend of blueberries, raspberries and strawberries — garnished with orange zest and roasted almonds — and you'll wonder why it's not called berry bisque. Sure, hot soup makes you all warm inside — but the cool stuff just makes you clever.

5 Borscht

Like we said, not all borscht is hot. When the weather turns, the beet soup rendition at Zeke's Deli is ice-cold refreshment. The bowl of purple-tinged beet broth is capped with sour cream and is much sweeter than the steamy kind. The best part — you can take a quart home with you.
