Il Viaggio Di Vetri: A Culinary Journey (Ten Speed Press) includes 125 of Vetri's most popular dishes. Garces' Latin Evolution (Lake Isle Press) touches on plates from Mexico City to the Basque region of Spain. The night will begin with three courses at Amada, after which a trolley will drive guests (and chefs) to Osteria for three more. All courses will include wine pairings.
