Chef Mark Tropea and pastry chef Krystal Weaver debuted their Liberties Walk BYOB this past Tuesday. Tropea is doing a contemporary American menu — dishes include scallop crudo with preserved lemon, chives and vanilla salt; black trumpet mushroom-crusted tuna with fava beans, black truffle and foie butter; and a passion fruit panna cotta with polenta cake, sweet corn salsa and milk chocolate sorbet for dessert. PaperStreet promoter Tommy Up's lively burger and shake lounge will officially debut to the public tomorrow at 5 after two weeks of much-blogged-about soft-opening activities. On the menu, designed by Time chef Josh McCullough: single- to triple-patty burgers on Martin's Potato Rolls, with a smart array of customizable toppers; three non-beef burgers, including the seared-white-bean "Cali-Bunga"; lobster fish sticks with a Dewar's aioli dipping sauce; and $10 "adultshakes" (milkshakes imbued with booze). They'll do 5 p.m. to 2 a.m. on weekdays and noon to 2 a.m. on Saturday and Sunday (food till 1 nightly; lunch coming soon) to accommodate the daytime Piazza crowd. More on Meal Ticket.
