Dmitri Chimes, who owns long-successful restaurants in Queen Village and Fitler Square, is now in NoLibs with Dmitri's No. 3. The food at this spot, which, like the QV original, is BYOB and does not accept reservations, follows the same known-and-loved Dmitri's formula — grilled seafood and meat, fresh, fluffy pita, hummus, baba ghanoush, more. You've got what many consider to be the city's best burger in your arsenal. What's next? Make it smaller! That's what Rob and Maggie Wasserman, owners of Rouge, have done with 500°. Rouge chef Matthew Zagorski designed the burgers for this quick-serve companion to the swank Rittenhouse destination, relying on the same flavorful beef blend as the famous Rouge burger for the 5.5-ounce patties, as well as the same bun baker (the NEast's Wild Flour Bakery). The cooked-to-order 500° burgers, however, are both cheaper ($4.75-$5.75 for sandwiches alone; $9-$12.50 for combos with fries, sodas and milk shakes) and easier to access, as the spot is a fast-turnaround operation. >> Here's news for all y'all caffiends. Early April should see the opening of Bodhi Coffee (410 S. Second St.), a local/fresh/organic café in Headhouse Square from Bobby Logue. He'll be brewing Stumptown coffee.
>> Unitea is the name of the brand-new tea bar and café Kashif Ahmad hopes to open next week at 265 S. 44th St.
>> Cups & Chairs Tea Café (701-03 S. Fifth St.) should open by May, offering a wide variety of loose-leaf teas. Owner Kylie Tsai will also serve light fare.
>> Mugshots, which has locations in Fairmount and Manayunk, will open a third shop, at 2831 Girard Avenue in Brewerytown, this June.
